French Tasting Menu in Madrid

The French tasting menu is Chef Thierry Gustin's signature: a progression of 5 to 9 short, refined, balanced courses telling a complete gastronomic story in 2h30 to 3h. Each course is a technical miniature of French haute cuisine: amuse-bouche, cold starter, hot starter, fish, pre-dessert or granité, signature meat, optional cheese table, signature dessert, mignardises.

A complete gastronomic experience

The techniques are those of grande cuisine: emulsions, foams, reduced jus, low-temperature cooking, classic beurre blanc/wine sauce mounting, foies and truffles in their finest uses. The products follow the French tradition (southwestern foie gras, Échiré butter, Guérande salt, PDO cheeses) complemented by the best Spanish production (Galician fish, acorn-fed Iberian, extra virgin olive oil).

Pairings are thought of in harmony: champagnes to open, Burgundy whites with fish, Rhône or Rioja reds with meat, sauternes or sherry for desserts. Service is Russian-style, course by course, with a brief presentation of each creation.

For 4 to 12 seated guests at your table. Rates: 5 courses from €110/pers, 7 courses from €145/pers, 9 courses from €195/pers.
