Menu philosophy

Cooking what the market offers today

Every menu is born on the stalls of La Paz, Chamartín or Mercado de la Cebada. No fixed card: we listen to the season, talk with the producer and build a gastronomic story tailored to your table.

Seasonal produce

Wild Cantabrian fish, vegetables from nearby growers, cheeses from small affineurs and meat from selected farmers.

French technique

Sauces reduced for hours, butters mounted to order, slow cooking: the classical foundation behind every dish.

Mediterranean soul

Extra virgin olive oil, Levantine citrus, fresh herbs: Madrid's light in every bite.

The flagship menu: a seven-act journey through the Chef's signature. Designed for special occasions —anniversaries, proposals, high-end business dinners— where every plate is a small narrative.

Mediterranean Menu

A bright, generous, sun-drenched menu. Inspired by the Madrid markets and the Levantine huerta, it celebrates well-understood simplicity: few ingredients, all essential.

Of course. The menus are examples. After an initial call we'll build your bespoke card together, blending Mediterranean, French or tasting inspiration to suit your guests.

No. Prices cover produce, preparation and service. We can take care of buying the wines for an extra fee, or work with your personal cellar.

Ideally 7 to 14 days for a private dinner and 4 to 8 weeks for an event (wedding, corporate). For urgent requests, contact us directly via WhatsApp.

A clean work surface, a hob (gas or induction), an oven and a fridge. The Chef brings his professional tools, technical tableware and optional table linen.

Yes. 48 h before the service you'll receive the final menu as a PDF, with a description of every dish, ingredients and pairing suggestions.
